Skipping breakfast on a busy weekday morning can be tempting but we can’t stress how important it is to fuel up in those early hours. By eating a healthy breakfast, it can really set your day the right way and prevent over snacking later on.

Here are five easy breakfast idea’s for the week, you can experiment and try a new one each day or even have the same for several days. Some recipes can be prepped on a Sunday and last a couple of days in the fridge.

1. Green Smoothie

Sometimes the simpler the better, nothing is easier than a on the go smoothie. For those who aren’t used to drinking green smoothies then this may not be the most visually appealing, however – we promise you this smoothie tastes delicious and full of sweetness.

Prep time: 5 mins

Ingredients:
– 2 cups of spinach
– 1/3 of a cucumber
– 1/2 banana
– 1 apple
– squeeze of fresh lemon
– 1 cup of almond milk
– 2-3 ice cubes

How to make:
– Blend, Taste, Enjoy!

2. Raspberry & Banana Overnight Oats with Chia

This is our all time favourite breakfast for work, simply because it’s so filling and you can try out many different combinations to suit your taste and mood. You can just grab it from the fridge and leave the house, this recipe requires you to make it the night before, or you can even prep 3-4 for the next few days. This recipe contains carbs (oats), good fats (peanut butter) and protein (chia seeds) to help you feeling full for longer.

Strawberry-banana-overnight-oats

Prep time: 15 mins
No of servings: 1

Ingredients:
– 1 cup of oats
– 1 tbsp chia seeds
– 1 cup of almond milk
– 1/2 banana
– 3-5 strawberries
– dash of maple syrup
– 1 tsp almond or peanut butter

How to make:
1. Mix the oats, chia seeds, almond milk and syrup into a jar or air tight container.
2. Slice up banana and strawberries and place them on top.
3. Seal the jar or container and leave in the fridge overnight or atleast 3 hours to set.
4. spoon 1 tsp nut butter in the jar when you’re ready to eat.

3. Blueberry and Banana Oatmeal

If you ask us, blueberries and banana is the ultimate combo. This recipe is great for those cold mornings where you want something hearty and warm for the body. It’s simple to make and can keep you full for hours before lunch time. Similar to the oats, you can try out different combinations to suit you.

The Hanging Spoon

Prep time: 15 mins
No of servings: 1

Ingredients:
– 1 cup of oats
– 1.5 cup of almond milk
– 1/2 banana
– handful of blueberries
– dash of maple syrup  (optional)

How to make:
1. In a pan heat up the oats and almond milk, bring to boil then turn to low heat and simmer for 5 minutes, occasionally stir.
2. Slice up banana and strawberries and place them on top.
3. add maple syrup for extra sweetness

4. Hearty Egg Omelette

Eggs are a great source of protein and there’s nothing better than a hearty omelette in the morning. This recipe is great for those mornings where you’re feeling something savoury.

Prep time: 15 mins

Ingredients:
– 2 eggs
– 3-5 cherry tomatos
– 1 cup of sliced mushrooms
– 1 cup of spinach
– olive oil
– pinch of salt, pepper, paprika and mixed herbs for taste. 

How to make:
1. In a bowl, beat together 2 eggs, add a pinch of salt and pepper and leave them aside.
2. Drizzle olive oil in a hot pan and throw in the tomatoes, mushrooms and spinach, stir fry for a few minutes.
3. Space out the ingredients in the pan an pour in egg mixture, sprinkle in paprika and mixed herbs.
4. Place the pan in the oven under the grill settings for 2-3 minutes to cook the top of the omelette.

5. Smashed Avocado on Toast

If you’re an avocado addict like us then avocado toast is always a brilliant idea. Look for avocados that are dark brown in colour and soft to touch. This recipe is simply and easy for busy mornings and you can add in an extra metabolism kick by topping the avocado toast with with chilli flakes.

Prep time: 10 mins
No of servings: 1

Ingredients:
– 2 slices of wholegrain toast
– 1 ripe avocado
– squeeze of lemon juice
– black pepper
– chilli flakes

How to make:
1. In a bowl, smash a whole avocado and add in lemon juice.
2. Toast the bread to your liking.
3. Spread 1/2 the smashed avocado on each slice of toast.
4. Finish off with a sprinkle of black pepper and/or chilli flakes for that extra kick.
